MINIATURE HOLIDAY CHEESECAKES 
18 vanilla wafers
3 (8 oz.) pkg. cream cheese, softened
3/4 c. sugar
1 tbsp. lemon juice
1 1/4 tsp. grated lemon peel
3/4 tsp. vanilla
3 eggs
Cherry pie filling or strawberry preserves

Place wafers flat side down on bottom of 18 foil or paper baking cups. Combine cream cheese, sugar, juice, peel and vanilla. Mixing at medium speed on electric mixer until well blended. Add eggs, one at a time, mixing well after each addition.

Pour into baking cups, filling each cup almost full. Bake at 325 degrees for 25 minutes. Cool before removing from pan. Chill. Top each with cherry pie filling or preserves. 18 servings.
