HUNGARIAN GREEN BEANS WITH HAM 
1 lb. green beans (fresh or frozen)
2 c. boiling chicken broth
2 tbsp. butter
2 oz. ham (boiled or baked), cut into strips
1 sm. onion, chopped fine
1 clove garlic, minced
3/4 c. sour cream
2 egg yolks
Salt
Pepper
1/2 c. fresh parsley, chopped

Wash beans, snap off ends and cut into 1-inch lengths, or use frozen. Add to boiling chicken broth in large saucepan. Cook over low heat until tender. Drain well. Meanwhile, melt butter in skillet. Saute ham until lightly browned. Remove with slotted spoon; reserve butter in pan. Add onion and garlic to skillet. Cook until onion is transparent. Add onion and garlic to beans. Mix lightly. Beat sour cream, egg yolks, salt and pepper. Cook over low heat 5 minutes. Transfer beans to warm serving dish. Sprinkle with parsley and ham. Makes 4 to 5 servings.
