APPLE CHIP TORTE WITH COOKIE
DOUGH CRUST
 
12 oz. cream cheese, softened
1/3 c. sugar
1 egg
1/2 tsp. vanilla
1 c. semi-sweet chocolate mini-chips (reserve a few for garnish)

Beat cream cheese, sugar, egg and vanilla until smooth. Stir in mini chips. Pour cheese mixture into cookie crust. Arrange apple slices (wedges) over cheese filling. Bake at 400 degrees for 10 minutes then reduce oven temperature to 350 degrees and continue baking 25-30 minutes or until crust is golden brown. Cool completely before removing from pan. 10 servings. When you really want to make an impression, this dessert is beautiful as well as delicious. I like to use a fluted quiche pan.

COOKIE DOUGH CRUST:

1/3 c. butter
1/3 c. sugar
1 egg
1/4 tsp. vanilla
1 1/2 c. unsifted all-purpose flour
1/2 tsp. baking powder

APPLE TOPPING:

Toss 2 cups peeled and thinly sliced apples with 3 tablespoons sugar and 1/4 teaspoon cinnamon until apple slices are lightly coated. Arrange these in a circle and garnish center with more mini-chips.
