PINEAPPLE CASSEROLE 
1 (20 oz.) can pineapple chunks
1/2 c. sugar
3 tbsp. flour
1/2 - 1 stick melted butter
1 c. shredded cheddar cheese
1 c. Ritz crackers (approx. 1 pkg.), crumbled up

Preheat oven to 350 degrees. Drain pineapple reserving 3 tablespoons juice. Combine sugar and flour; stir in juice and add cheese and pineapple chunks, mixing well. Spoon in buttered 1 1/2 quart casserole dish. Combine melted butter and cracker crumbs. Sprinkle over pineapple. Bake, uncovered for 20 to 30 minutes.
