TEXAS CAVIAR 
2 cans blackeyed peas (2 lbs.), drained
1 lg. tomato, diced
3/4 c. green olives
1/2 c. Jalapenos, sliced
1/2 c. red onion, diced
1/2 c. Italian dressing

Mix all ingredients in a large bowl. Serve at room temperature.
