CORN PIE 
1 1/4 c fine cracker crumbs
butter, melted
1/4 c chopped green pepper
1 T finely chopped onion
2 T flour
1 c milk
1 can whole kernel corn
1/2 tsp salt
1 tsp sugar
2 eggs, slightly beaten

Blend 1 cup cracker crumbs and 1/2 cup melted butter and press evenly on bottom and sides of baking dish. Cook pepper and onion in 2 T butter until onion is transparent. Blend in the flour and cook until bubbly. Add the milk and cook, stirring constantly, until thickened. Add the corn, salt, sugar and eggs. Mix well and pour into the crust. Top with remaining crumbs.

Bake at 400°F for about 25 minutes or until firm.
