FAT FREE BRAN MUFFINS 
2 c. 100% Bran (Nabisco)
1 1/4 c. skim milk
1 c. flour
2/3 c. firmly packed brown sugar
2 tsp. baking powder
1 tsp. cinnamon
3/4 c. applesauce
2 egg whites
1 tsp. vanilla

Combine bran and milk; set aside 5 minutes. Mix remaining dry ingredients. Mix together applesauce, egg whites and vanilla; add to bran/milk mix. Add dry ingredients and stir only until moistened. Divide evenly into 12 muffin cups. Bake at 400 degrees for 22 minutes. Do not overbake.
