PINEAPPLE COCONUT CHESS PIE 
1 1/2 c. sugar
3 tbsp. all-purpose flour
1/4 tsp. salt
4 lg. eggs, lightly beaten
1 tsp. vanilla
1/4 c. butter, melted
1 (3 1/2 oz.) can coconut
1 (15 1/4 oz.) can crushed pineapple, drained
1 deep dish pie shell, unbaked

Combine first four ingredients in a large bowl. Add eggs and vanilla, stirring until well blended. Stir in butter, coconut, and pineapple. Pour into pie shell. Bake at 350 degrees for 1 hour. Cover with foil after 40 minutes. You need no mixer with this pie.
