2 1/2 c. sugar 1/2 c. water 1/2 c. corn syrup 2 egg whites, beaten until very stiff 1 tsp. vanilla Mix sugar, water, and syrup in saucepan and bring to a boil. Boil until mixture spins a thread. Beating with a mixer as you pour, add half of mixture to beaten egg whites. Cook remaining half of mixture to hard crack stage. Hard crack stage has been reached when a small amount of the mixture dropped into a dish of ice cold water sounds like a dime hitting the side of the glass. Then pour this mixture into beaten mixture. Continue beating until it holds its shape when dropped from a teaspoon; add vanilla. Work quickly. Mixture hardens rapidly at this stage. |
