SOFT TACOS
1 lb. hamburger (80% lean)
1 tsp. garlic powder
1 tsp. cumin
1 tsp. dried cilantro
1 tsp. dried oregano
onions, tomatoes lettuce and salsa as you wish to top the tacos

Place hamburger in a pan that has a lid. Break up hamburger into small pieces. Add the spices. Brown the meat on medium heat, stirring often. Keep lid on pot and steep the hamburger in its own juices to ensure distribution of flavor. Stir occasionally and break up any clumps of meat. Steep until the grease is clear. When the grease is clear, drain the grease from the meat and set aside to cool.

In a frying pan, place 2 tsp. corn oil and heat till the oil is shimmering. Place a 10-inch corn tortilla into the oil and cook. Turn tortilla when you notice that the tortilla is firming up. Cook the other side the same. Remove tortilla and place another tortilla into the skillet. Place the just cooked tortilla on top off the new tortilla to weight it down and to transfer some of the oil to the new tortilla. Remove after a few seconds. The new tortilla will be cooked same as the first tortilla. Add a little oil as required to coat the tortillas. Remove the cooked tortilla from the other tortilla and place on paper towels to drain the remaining oil. Repeat until all tortillas are cooked. Assemble and enjoy!
