CARAMEL FUDGE 
3/4 c. butter
2 c. packed brown sugar
1/2 c. evaporated milk
1 tsp. vanilla
1 c. chopped pecans
3 c. sifted powdered sugar

In heavy saucepan melt butter; add brown sugar, cook over low heat 2 minutes, stirring constantly. Add milk and continue cooking and stirring until mixture comes to boiling. Remove from heat, cool to lukewarm. Stir in vanilla, gradually add powdered sugar, beating vigorously until the mixture is a fudge-like consistency. Stir in nuts. Spread in a buttered pan, chill, then cut into squares when ready to eat.
