PASTA WITH SAUSAGE AND EGGPLANT 
1/2 c. mushrooms, sliced
1 med. onion, chopped
1 sm. eggplant
8 oz. sweet Italian sausage
1 med. tomato, diced
1/2 c. bottled olive oil vinegrette dressing
2 tbsp. finely chopped parsley
8 oz. cooked drained ziti

Slice eggplant lengthwise in quarters then cut into 1/2 inch slices. Set aside. In large skillet brown sausage. Add all other ingredients except pasta bring to boil and simmer uncovered until sausage and eggplant are well done. Toss with hot pasta.
