PEANUT BUTTER BITES 
2 c. quick cooking oats (divided)
1 c. whole wheat flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/8 tsp. salt
1 c. smooth peanut butter
1 c. butter
1/3 c. sugar
1/3 c. packed brown sugar
2 eggs
1 tsp. vanilla
1/2 c. unsalted cocktail peanuts, chopped
1/3 c. strawberry jam

Preheat oven to 325 degrees. In medium bowl combine 1 2/3 cups oats and next 4 ingredients. In large bowl with mixer at low blend peanut butter and butter. Add sugars increase speed, beat until light and fluffy. Add eggs and vanilla. Stir in 1/3 cup oat mix and peanuts. Shape 1 tablespoon dough into balls. Roll in oats. Place on cookie sheet. Press finger in for indentation, fill with strawberry jam. Bake 15 minutes.
