COUNTRY RIBS AND CABBAGE 
2-3 lbs. country style pork ribs
2 stalks celery, chopped or celery salt to taste
1 clove garlic, minced or garlic powder
1 med. onion, chopped
Pepper & salt
2 c. rice
1 med. head cabbage, green or red

In a large pot cover the ribs with water and season with celery, garlic, onion, salt and pepper. Boil gently until the ribs are done, 30 to 45 minutes. Remove the ribs from the pot. Pour the resulting stock through a strainer into another container. Measure 4 cups stock back into the pot. Stir in the rice and the vegetables from the strainer into the stock. Bring to a boil, cover and reduce heat. Simmer 20 minutes. Place the ribs in the pot with the rice. Add 2 more cups of stock and arrange wedges or slices of cabbage over the top. Cover to let the cabbage steam 15 minutes over low heat. Serve. Increase or decrease as necessary.
