4 tbsp. olive oil
1 tbsp. butter
Minced garlic, to taste
2 lg. Spanish onions, peeled & sliced in rings
1 green pepper, cored, seeded & sliced
1 red bell pepper, cored, seeded & sliced
1 yellow bell pepper, cored, seeded 7 sliced
1 yellow squash, cubed
2 zucchini, sliced
3 fresh tomatoes, peeled & cubed or 1 can stewed tomatoes, drained
2 eggplant, peeled & cubed
