DUCHESS POTATOES 
4 to 6 med. potatoes
2 tbsp. butter
Salt & pepper to taste
Milk
Garlic powder
3/4 to 1 c. grated cheese, any kind you like

Peel and cut up potatoes. Cook in salted water until tender. Drain, then mash until smooth with milk. Add 2 tablespoons butter; stir in salt, pepper and garlic powder to taste. Add some of the grated cheese; stir. Scoop mixture into individual greased containers or into a casserole dish. Top with the remaining cheese. Bake at 350 degrees for 30 to 40 minutes, until hot and bubbly. This is also great for leftover mashed potateos you don't know what to do with.
