UPPER CRUST CHICKEN 
10 slices 1 day old bread
2 c. chopped cooked chicken
1 c. chopped celery
2 c. sharp Cheddar cheese (8 oz.)
1 can mushroom soup
1 can water chestnuts
1 c. mayonnaise
2 eggs, slightly beaten
1/2 tsp. salt
1/2 tsp. poultry seasoning
1 1/2 c. milk

Trim crust from bread and save. Cut bread diagonal into quarters. Cut crust into cubes. Combine bread crust, chicken, 1 3/4 cup cheese, celery, mushroom and chestnuts; mix well. Pour into pan 11 3/4 x 7 1/2 inch. Arrange bread quarters over chicken mixture.

Combine mayonnaise, eggs and seasonings; mix well. Pour over bread and sprinkle remaining cheese. Cover and refrigerate several hours or overnight. Bake uncovered for 30 minutes at 375 degrees. Serves 8.
