SIMPLE SQUASH SIDE DISH 
1 lg. butternut squash
8 to 10 med. to lg. mushrooms
3 stalks celery
5 to 7 carrots
1 bunch scallions (optional)
Other vegetables to taste

Remove the skin of the squash by slicing squash first; cut into chunks. Wash and slice mushrooms, celery, carrots, and scallions.

Combine vegetables in a covered microwavable dish with a tablespoon of water; cook on high in microwave for 12 to 15 minutes. Add cinnamon to taste after cooking. This an also be cooked on the stove in a saucepan for 30 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
