EASY AND GOOD CHICKEN 
8 sm. chicken breast fillets
2 lg. red onions, sliced
2 lg. green peppers, sliced
1/2 lb. mushrooms, sliced
2 to 3 tbsp. butter
Salt and pepper
2 tsp. parsley flakes
1 tsp. basil
3 med. tomatoes, cubed
1/2 c. slivered almonds (optional)

Melt butter in skillet; add chicken cut into small pieces, about 2 inch chunks. Brown on both sides; cover with peppers, tomatoes, onions, and simmer about 1/2 hour on medium heat. Add salt, pepper, basil, parsley, and mushrooms. Cook about 5 minutes more. Add nuts, if desired. Serve as is or on rice or noodles.

May need 1/2 cup water added, during cooking.
