DIABETIC RAISIN COOKIES 
2 c. raisins, boiled 3 minutes in 1 1/4 c. water
1 tsp. baking soda
1 c. butter
3 eggs, beaten
2 1/2 tbsp. Sweet 10
1 tbsp. vanilla
2 c. flour
1/2 tsp. salt
1 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. nutmeg

Add soda and butter to raisins while hot and let cool. Mix eggs, Sweet 10, and vanilla well; add to raisin mixture. Sift together flour, salt, baking powder, cinnamon, and nutmeg; add to raisin mixture.

May add 1/2 cup chopped dates and 1/2 cup chopped nuts. Drop by teaspoons and bake at 350 degrees for 12 minutes.
