MEATLOAF ITALIAN STYLE 
1 c. med. cracker crumbs (20 crackers)
1 1/2 lbs. ground beef
1 (6 oz.) can tomato paste (2/3 c.)
2 eggs
1 med. onion, finely chopped
1/4 c. finely chopped green pepper
3/4 tsp. salt
Dash of pepper
1 (12 oz.) carton sm. curd cottage cheese
1 (3 oz.) can chopped, broiled mushrooms, drained
1 tbsp. snipped parsley
1/4 tsp. oregano

Set aside 1/2 cup of the cracker crumbs. Combine remaining crumbs with next 7 ingredients; mix well. Put half the mixture in bottom of 8 x 8 x 2 inch baking pan. Combine reserved crumbs, cottage cheese, mushrooms, parsley and oregano; spread evenly over meat in pan. Top with remaining meat mixture. Bake at 350 degrees for 1 hour. Let stand 10 minutes before serving. Serves 8.
