POLYNESIAN CAKE 
1 c. corn oil
2 c. flour
3 eggs
2 c. sugar
2 jars baby carrots or yams (jr.)
1 sm. can crushed pineapple (use juice, too)
2 tsp. baking soda
2 tsp. cinnamon
2 tsp. vanilla
1 c. chopped nuts
1 c. shredded coconut
Salt

Mix all by hand. Put in greased 9 x 13 inch pan. Bake at 350 degrees for 35 minutes. Frost when cool.

FROSTING:

1 (16 oz.) carton all purpose cream
2 pkg. instant vanilla pudding
1 c. water
1 tsp. vanilla

Beat all together.
