CHICKEN KABOBS 
2 tbsp. peanut butter
2 tbsp. soy sauce
2 tbsp. minced green onion
1 tbsp. rice wine vinegar
1 tbsp. sesame oil
1 lg. clove garlic, pressed
1 tsp. sugar
1/2 tsp. hot oil or Tabasco

Mix all ingredients in a 2 cup glass container. Microwave on Hi 1 minute, stir until smooth.

Thread chicken on 8 bamboo skewers. Arrange on microwave bacon rack. Brush both sides of chicken with sauce.

Microwave on Hi 3 1/2 minutes. Re-arrange skewers. Microwave Hi 3 1/2 to 4 more minutes. Serve with rice and leftover sauce.

Since microwave ovens vary in power, you may need to adjust your cooking time.
