BRUNCH DISH 
12 slices white bread, trimmed
6 slices pimento cheese
1 lb. baby shrimp (or bacon, ham or chip beef) (shrimp is best)
1/4 c. diced green pepper
1/4 c. diced green onions
4 eggs
2 2/3 c. milk
Salt & pepper

Butter 9 x 13 inch baking dish. Lay 6 slices of bread in bottom of dish. Add cheese and shrimp or bacon, etc., green pepper and green onions. Top with remaining bread slices.

Beat eggs, milk, salt and pepper. Pour over sandwiches. Cover and let stand in refrigerator overnight. Remove from refrigerator 1 hour before cooking. Sprinkle paprika and parsley on top before cooking. Bake 45-50 minutes at 350 degrees. Good served with fresh fruit and or hash brown potatoes.
