2 c. sifted cake flour
1 1/4 c. sugar
2 1/2 tsp. baking powder
1 tsp. salt
3/4 c. milk
2 eggs
1 1/2 tsp. vanilla

Grease 9 x 9 x 2 inch baking pan; lightly dust with flour, tap out any excess. Combine first 4 ingredients and shortening in medium size bowl; stir in milk until blended. Beat at medium speed with electric mixer 2 minutes. Add egg and vanilla; beat 2 minutes more. Spread evenly in prepared pan and bake in moderate 350 degree oven 30 minutes or until center springs back when lightly pressed with fingertip. Cool in pan or wire rack.
