SAVORY MEATBALL CASSEROLE 
1 pound ground beef
1/2 cup fresh bread crumbs
1 egg
1 teaspoon salt
oil
2 cups water
1 cup uncooked rice
2 large carrots, quartered
1/2 cup green peppers, chopped
1/4 cup onion, chopped
1/2 pound velveeta cheese, cubed

Combine meat, bread crumbs, egg and salt. Mix lightly. Shape into 18 meatballs, brown in small amount of oil. Drain.

Add water, rice, carrots, green pepper and onion. Cover and simmer 25 minutes.

Add cheese. Heat until cheese melts. Serve.
