SCALLOPED HASH BROWNS 
1 pkg. (32 oz.) hash browns
1 can cream of potato soup
1 can cream of celery soup
1 green pepper, chopped
1 onion, chopped
1 carton (8 oz.) sour cream
parsley flakes
Paprika

Put frozen hash browns, pepper, and onion in bowl with soups and sour cream and let set for a little while so they mix well. Then put into 9 x 13 pan, sprinkle with parsley flakes and paprika. Bake at 300 degrees for 1 hour to 1 hour 30 minutes. I have used boiled potatoes with jackets in place of hash browns with very good results.
