BROILED MACKEREL | |
2 tsp. olive oil 1/2 tsp. salt 1/2 tsp. pepper 1 1/2 tsp. lemon juice 2 lb. mackerel, split 1/2 clove garlic, chopped fine 1 tbsp. chopped parsley 1 sm. can tomatoes 2 tbsp. water 1/2 tsp. salt 1/2 tsp. pepper 3 tbsp. mackerel cut into 4 pieces Place olive oil, onion, garlic, and parsley in skillet and brown. Add tomatoes, water, salt, and pepper; cook 5 minutes. Add fish, cover skillet and cook 5 minutes. Turn fish over and cook 10 minutes longer. Serves 4. |
