TORTELLINI WITH PEPPERS 
1 lb. cheese tri-color tortellini
3 tbsp. olive oil
4 red and/or yellow peppers, cut into 3/4 inch chunks
1 sm. onion, chopped
4 garlic cloves, chopped
1 tsp. basil
1/2 tsp. salt
1/2 tsp. pepper
1/4 c. chicken broth
1/4 c. Parmesan cheese
Sliced black olives

Cook tortellini. Meanwhile heat oil over medium high flame in skillet. Add oil and rest of ingredients except for chicken broth and cheese. Saute for 5 minutes. Add chicken broth. Cover and simmer for 10 minutes. Add tortellini and sprinkle with Parmesan cheese.
