CREAM OF BROCCOLI AND CHEESE
SOUP
 
2 c. chopped celery
1 c. finely chopped onion
1 (10 oz.) pkg. chopped broccoli
1 c. cottage cheese
2 c. milk
1 can cream of chicken soup
1/2 tsp. salt
1/8 tsp. pepper

Cook celery, onion, and broccoli in microwave on high for 6 minutes. Stir after 3 minutes; set aside. Blend cottage cheese in blender until smooth. Slowly add milk and blend. Add chicken soup and blend. Add to cooked, undrained vegetables and microwave on high until heated (3-4 minutes). Add salt and pepper.

Since microwave ovens vary in power, you may need to adjust your cooking time.
