VEGETABLE LASAGNA 
1 (8 oz.) box lasagna noodles
16 oz. American cheese
16 oz. Mozzarella cheese
10 or more chopped mushrooms
2 cans zucchini with tomato sauce
16 oz. cottage cheese (med. curd)
1 box chopped spinach

Boil noodles until tender. Place in bottom of 12 ounce baking pan. Layer spinach, mushrooms, and zucchini. Spread cottage cheese and American cheese. Layer and repeat. The last layer should be Mozzarella cheese. Bake at 375 degrees for 45 minutes.
