FRITTATA 
1 c. plus 2 tbsp. flour
1 doz. eggs
1 lb. Ricotta cheese
1 c. grated Romano cheese
1 tsp. baking powder

Mix all ingredients together and pour 1/2 of batter into bottom of well greased 13x9 cake pan and top with 1/2 lb. sliced pepperoni; 1/2 lb. grated Mozzarella; 1/2 lb. grated hot pepper cheese.

Cover with remaining batter and bake at 350 degrees for 40 to 50 minutes. Cut in squares. Serve warm.
