BLUEBERRY PANCAKES 
2 c. fresh blueberries
3 c. self-rising flour
3 eggs, beaten
2 tbsp. oil
2 tbsp. sugar
2 c. milk

Wash and remove stems from berries; drain well, set aside. Sift flour and sugar together. Combine eggs, milk, and oil. Gradually add to dry ingredients. Stir only until coated with batter. Pour onto a hot lightly greased griddle. Cook until surface is covered with bubbles. Turn and cook until bottom is brown.
