APPLE ALMOND TART 
PASTRY:

1 3/4 c. all-purpose flour
2 tbsp. sugar
1 1/2 sticks lightly salted butter, chilled, cut in cubes
3 tbsp. cold water

FILLING:

1 lb. Golden Delicious apples
2 tbsp. sugar
2 c. Almond Pastry Cream filling

ALMOND PASTRY CREAM:

1 generous c. sugar
2 1/4 c. almond meal
2 sticks unsalted butter, softened
4 eggs, lg.
1/4 c. all-purpose flour

In bowl of electric mixer, combine sugar and almond meal. Add butter and beat with flat beater until very light and creamy. Add eggs one by one, beating well after each addition. Stir in flour last. Makes 2 cups.
