WELL-DONE PIGS IN THE BLANKET | |
1 med. sized cabbage 3 lb. ground chuck 1 lg. bottle Heinz ketchup 2 c. cooked rice Salt and pepper to taste Core cabbage and steam until leaves are pliable and are easily separated. Set aside and cool. Cook and cool rice. Mix meat with rice; season with salt and pepper. Fill cabbage leaves with meat mixture; roll and tuck in corners. Mix a little ketchup with enough water to cover the bottom of a roasting pan. Layer piggies in roasting pan; adding ketchup to each layer. Add a little water to top layer; cover and bake in 250 degree oven for 2 1/2-3 hours. Lower heat to 200 degrees; remove lid. Bake 45 minutes. Piggies should be well done with very little juice in pan. Remove to serving platter; sprinkle with grated cheese. Serve with fresh Italian bread. NOTE: A meal that can be made in advance. |
