POTATO PANCAKES 
1/2 c. Eggbeaters or 2 eggs
3 c. cubed raw potatoes
1/2 c. chopped onion
1/4 c. flour
2 tbsp. butter or cooking oil
Applesauce (optional)

Place Eggbeaters or egg in blender container. Add potatoes, onion and flour. Blend until cubes are well grated and the mixture is evenly rough in consistency. Melt 1 teaspoon butter or oil on hot griddle for every 2 pancakes. For each pancake, pour 1/4 cup batter onto hot griddle. Fry on both sides until well browned, about 3 minutes per side. Serve hot with applesauce or your favorite syrup.
