STUFFED ACORN SQUASH 
1 acorn squash
1 tsp. chopped onion
1 tsp. chopped green pepper
2 tsp. butter
1/2 c. grated cheese
1 c. soft bread crumbs
Salt and pepper

Cut squash lengthwise into halves. Scoop out seeds and place cut side down in pan with a little water. Bake at 400 degrees until tender, about 35 minutes. Scoop out center, leaving shells about 1/4 inch thick. Mash pulp and add remaining ingredients. Pile in shells and place in 350 degree oven to warm through and brown tops.
