SKILLET PUDDING 
1 c. butter
1 c. brown sugar
1 c. nut meats, broken
1 c. pineapple, drained and dried
1 c. white sugar
4 eggs, separated
1 c. flour
Whipped cream

Melt butter and brown sugar in an iron skillet. Add to this the nuts and pineapple. Make a batter by beating egg yolks into the white sugar. aDd flour. Fold in the egg whites which have been stiffly beaten. Pour this over the fruit mixture in the skillet. Bake in slow oven at 325 degrees about 1/2 hour. Invert on platter and serve with whipped cream.
