FABULOUS FISH 
1 lb. flounder fillets
Salt & pepper
1 tsp. lemon juice
1/2 c. chopped mushrooms
1 tbsp. butter
1/2 c. diced tomatoes
1/4 c. slivered green pepper
3 tbsp. chopped green onions
4-6 orange sections
4-6 grapefruit sections
3 tbsp. orange juice

1. Sprinkle fish with salt, pepper and lemon juice. Fold in thirds and place in a small baking dish.

2. In skillet, saute mushrooms in butter until lightly browned, 4-6 minutes.

3. Stir in green pepper, tomato and 2 tablespoons onion, cook for 1 minute. Spoon over fish.

4. Add fruit sections; drizzle with juice.

5. Cover tightly with foil. Bake 12-15 minutes at 400 degrees or until fish is tender.

6. Sprinkle with remaining onion.
