CREAMY MINTED MOCHA MIX 
2 hard peppermint candies
1/2 c. non-dairy creamer
1/2 c. confectioners sugar
1/4 c. instant coffee
2 tbsp. unsweetened cocoa

In blender, finely crush 2 hard peppermint candies. Add remaining ingredients and mix well. To serve: Spoon 2 tablespoons mix into cup and add 3/4 cup boiling water. Stir and garnish as desired.
