CHICKEN CACCIATORE | |
4 c. canned tomatoes 1 tsp. sugar 2 1/2 lb. chicken 1-2 tbsp. olive oil 1 lb. Italian sausage 1 c. onions, chopped 1 c. mushrooms, sliced 1 lg. green pepper, diced 1 minced garlic clove 1 tsp. oregano Cook tomatoes down to 2 cups and add sugar. Salt and pepper chicken and brown in olive oil. Shape sausage into balls and brown. Cook 15 minutes and then add other ingredients, cover and cook 30-45 minutes over medium heat. Serve with rice. |
