CORN MUFFIN MIX 
1 c. sweet rice flour
1 c. cornmeal
1/4 c. sugar
1/2 tsp. salt
4 tsp. baking powder
1 egg
1 c. milk
1/4 c. oil

Sift together dry ingredients. The more you sift the better, less grainy the batter will be. Add egg, milk and oil. Mix until smooth. Pour batter into greased muffin tins. Bake at 425 degrees for 12 minutes until lightly browned.
