POTATO-STUFFED FRANKS 
4 servings mashed potatoes
2 tbsp. parsley, chopped
1 (16 oz.) pkg. frankfurters
2 tbsp. onion, finely chopped
1 tsp. prepared mustard
1/2 c. cheddar cheese, shredded (2 oz.)

Prepare potatoes; stir in parsley, onion, and mustard. Split franks lengthwise, not cutting completely through. Spread open, then spread with potato mixture. sprinkle cheese on top. Broil about 5 inches from heat until cheese is brown, about 5-8 minutes.
