GRAM'S ZUCCHINI BREAD | |
1 c. salad oil 2 eggs, slightly beaten 2 c. sugar 2 c. grated raw zucchini 2 tsp. vanilla 3 c. flour 1 tsp. baking soda 1/4 tsp. baking powder 1 tsp. salt 3 tsp. cinnamon 1 c. chopped nuts Combine oil, eggs, sugar, zucchini, and vanilla in large bowl and blend well. Mix flour, baking soda, baking powder, salt, and cinnamon. Stir into oil mixture. DO NOT BEAT. Stir in nuts. Pour into 2 (8 1/2 x 4 1/2) loaf pans or 4 baby loaf pans that have been greased and floured and then put a piece of brown grocery bag paper in the bottom of the pan. Spray the brown paper with "Pam". Bake at 325 degrees for 1 hour for baby loaves or 1 1/2 hours for large loaves, or until tests done with a toothpick (toothpick inserted into center comes out clean). Let set in pan 10-15 minutes to cool. Turn our onto towel on rack and remove brown paper. Freezes well. |
