STIR-FRIED CABBAGE 
5 c. (about 1 lb.) shredded cabbage, Chinese, green, red or savoy
3 tbsp. peanut oil
2 tbsp. sugar
1 tsp. salt
Dash ground pepper (black)
1 tbsp. vinegar

1. Prepare shredded cabbage first; set aside on platter.

2. Preheat wok or skillet about 3 minutes; add peanut oil. Turn heat to moderate. Stir fry cabbage for about 3 minutes.

3. Add sugar, salt, pepper and vinegar. Cook, stirring constantly until cabbage is tender, but crisp, about 3 minutes.
