HOMEMADE BREAD 
3 pkg. yeast
1/2 c. warm water
1/2 c. sugar
4 tsp. salt
1/3 c. melted shortening
5 c. water
16-18 c. sifted flour

Sprinkle granulated yeast over warm water, or crumble compressed yeast into lukewarm water. Combine sugar, salt, shortening, and water in 5 quart bowl. Stir in 8 cups flour. Add yeast and enough of remaining flour, 8-10 cups, to make stiff dough that cleans the bowl when you stir.

Knead on floured surface, 5-8 minutes. Place in greased bowl, cover and let rise about 1 1/2 hours. Punch down dough. Divide in half. Shape each half into smooth balls, let rest 10 minutes. Shape into rolls or loaves place in greased pans. Grease top lightly, let rise until doubled about 1 hour. Bake at 400 degrees for 40-50 minutes.
