HAM - LEEK PIE 
2 leeks (white part only) sliced thin
1 lg. onion, sliced thin (1 cup)
3 tbsp. butter
1 tbsp. flour
1/2 tsp. salt
1/8 tsp. pepper
1/8 tsp. nutmeg
1 c. milk
4 eggs, slightly beaten
1/4 lb. cooked ham, diced fine
1 unbaked 9 inch pie shell

In large skillet, saute leeks and onion in butter until tender. Combine flour, salt, pepper and nutmeg and stir into onion mixture. Gradually stir in milk; cook and stir until mixture thickens and begins to boil. Stir some of it into eggs, then add eggs to skillet. Stir in ham. Pour into pie shell. Bake at 400 degrees for 30 minutes, or until knife inserted near center comes out clean.
