KENTUCKY BUTTER CAKE | |
Cake: 2 cups all purpose flour 1 teaspoon baking powder 1 teaspoon salt 1/2 teaspoon baking soda 2 cups sugar 1 cup (2 sticks) butter, softened 4 large eggs 1 cup buttermilk or sour cream 2 tablespoons vanilla extract Sauce: 1 cup sugar 1/2 cup butter 1/3 cup water 1 tbsp. vanilla extract confectioner's sugar, for sprinkling on top For Cake: Heat oven to 325°F. Sift together salt, flour, baking powder and soda in medium bowl; set aside. Beat eggs and butter with electric mixer until well blended. Add eggs one at a time, beating well after each addition. Combine buttermilk or sour cream with vanilla. Add buttermilk and flour mixtures alternately in thirds, ending with flour mixture, beating well after each. Spoon batter into greased tube pan. Bake until wooden pick inserted into center comes out clean, about 1 hour to 1 1/4 hours. Prick cake with wooden pick immediately after removing from over. Pour hot Kentucky Butter Cake Sauce over cake. Let stand until completely cool. Run knife around edge of pan, invert cake onto serving plate. Sprinkle with confectioners sugar. Yield: 16 servings. For Sauce: Heat sugar, water, butter, and vanilla in small saucepan over medium heat until sugar dissolves and butter has melted. Do not boil. |
