CORNMEAL PANCAKES 
1 1/2 c. cornmeal
1/4 c. flour
1 tsp. baking soda
1 tsp. salt
1 tsp. sugar
2 c. buttermilk
2 tbsp. oil
1 beaten egg yolk
1 stiffly beaten egg white

Sift cornmeal, flour, soda, salt, and sugar. Add buttermilk, oil, and egg yolk. Fold in egg white. Let stand 10 minutes. Bake on griddle. Makes 16.
