SPINACH OR BROCCOLI SOUP 
This is very easy, but you need a blender. With a little imagination and leftovers, the variations are limitless.

2 c. milk
2 tbsp. flour
2 tbsp. butter
1 tsp. salt
Pinch of pepper
1/2 to 3/4 c. spinach or broccoli (cooked)
4 sprigs parsley
1/2 c. celery leaves
1 thin sliced onion

Put the above in a blender in the order given. When well blended, heat in a double boiler. Stir occasionally. Makes about 2 1/2 cups. Add a little grated cheese to each bowl of soup.
